  • 3 carrots, chopped

  • 2 bay leaves

Instructions

  1. Season venison generously with salt and pepper. Heat lard in a heavy Dutch oven; sear venison in batches over high heat until deeply browned on all sides. Remove and set aside.
  2. In the same pot, cook onion and garlic 5 min until softened. Return venison. Add juniper, bay, thyme, stock, and wine. Bring to a boil.
  3. Cover and braise on very low heat (or 325Β°F oven) for 2 hours. Add root vegetables; braise another 45 min until vegetables are tender and venison pulls apart. Remove bay and thyme. Adjust seasoning and serve with cornbread.
